Arrowhead Mills offers consistently high quality products that we depend on. I do prefer the white/light spelt flour when I can get it, because it will bake up a bit better, but this whole grain flour works as well to create bread and cookies for those of us who can tolerate some gluten, but not wheat.

I use three cups of bread flour
1 cup of this spelt flour
and make terrific no knead bread. Add a little vital wheat gluten for lift if you are not sensitive and a little rye flour to help jazz your yeast -- especially if you are working with sour dough.
the result is terrific.

Update 12/10/11
Still love the flour. Rethinking my subscription with Amazon as the last batch came poorly packed, with two of four bags torn. it was a mess.

I like it in baking scratch lemon cakes, Bakers Chocolate brownies, fruit cobblers,etc. I don't miss white flour in baking. I have food allergies to traditional wheat but I can use spelt. Whole grain spelt bakes up very light much like traditional white flour. Whole wheat flour is heavy and very graham tasting. Spelt has a slight graham taste and is very good with pineapple.
